The History of Recipes
It is actually possible to trace the history of written recipes way back into the distant past, at least as far back as early Egypt, and potentially, even further back. Having said that, sadly, these early cookbooks were just very simple hieroglyphic recipes for preparing food.
As we move into Roman times 25BC a man called Apicius assembled a few documents detailing recipes enjoyed by his fellow Romans. In his publication, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvres, main meal and desserts, something that is very familiar to us today. This early Roman chef informs us how the ancient Romans made use of many spices and herbs, including some that we all recognise like bay, fennel and parsley. Later, in the 15th century, the Crusaders brought back a variety of foods and herbs from Arab cooking, including spices like coriander, parsley, and rosemary. These new foods and spices created an eruption in recipe books, some of which are now in academic collections. By the advent of the 1900s, recipe books are highly popular mostly as a result of more people being able to read, people having increased leisure time and a general increase in wealth. |
