The History of Recipes
Written cooking instructions as an idea can be tracked way back into the far past, in fact as far into history as the Egyptians, and maybe further still. Having said that, these, old records were just basic hieroglyphic or cunieform instructions for preparing food.
Later on, in The time of the romans 25BC a roman called Apicius assembled a collection of scripts showing how to cook the recipes enjoyed by his fellow Romans. In his publication, Apicius tells us how the roman meals were split into hors d`oeuvre, entrees and afters, a style of dining still practiced today. This early Roman chef informs us how the cooks of his times used a wide range of spices and herbs, including a few that will be familiar to modern chefs like bay, rue and dill. Over the succeeding few centuries, the upper-class families of Wesstern Europe strove to serve up the best banquets, and because of this the best cooks and their recipe collections were greatly in demand. Notwithstanding that, it wasn`t until the 1800s that cooking and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to assembling, testing, and publishing recipes to help cooks of their time. When we get to the 20th century, cooking books are greatly in demand due to higher levels of literacy, people having more spare time and having more money. |
