The History of Recipes
Academics have proved the existance of recipes back into distant history, at least as far into history as the ancient Egyptians, and maybe further still. Interesting though that maybe, these, old recipes were just very basic hieroglyphic recipes for food preparation.
Fascinatingly, the oldest recipe found, according to food historians are a few clay tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful. During the time of the Roman Empire a Roman scholar, called Apicius, assembled some scrolls detailing recipes cooked by the Romans. In his works, Apicius tells us how the roman meals were separated into hors d`oeuvres, main meal and dessert, something that is very familiar to us today. Aspicius also tells us how the early Romans were skilled in the use of many spices and herbs, including a few that will be familiar to modern chefs for example basil, rue and dill. Over the following few hundred years, the wealthy families of Europe competed to offer the most exotic banquets, and as a result the best cooks and their collection of recipes could command a high salary. Even so, it wasn`t until the 19th century that haute cuisine and recipe publications became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to collating, testing, and publishing recipes of the day. By the arrival of the 20th century, recipe publications are in great demand, mostly due to increased literacy, people having more leisure time and having more money to spend. The introduction of television brought us TV cookery programs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to access thousands of recipes like the ones you can find on this site. |
