1 cup tofu, mashed
1 cup brown rice, cooked
1/2 cup celery, minced
2 garlic cloves, minced
1 tbsp nutritional yeast
1 tbsp peanut butter
2 tbsp shoyu or tamari
1/2 tsp sesame oil, toasted (opt)
1/2 tsp sage
4 tbsp whole wheat pastry flour, as needed
Directions
Place all ingredients, except for the flour, in a medium-sized bowl
and mix well. Using your hands, shape the mixture into 6 patties.
Press firmly so that the patties hold together well.
Dredge both sides of each patty in the flour and palce them on a
well-oiled cookie sheet.
Bake the patties at 400 deg for 25-30 minutes, or until they are
golden brown. Turn the patties over halfway through the baking.
Serve them with the sauce of your choice, acompanied by a steamed
vegetable and a salad.

The History of Recipes
Written cooking instructions as a concept can be observed back into the distant past, in fact as far back into history as the early Egyptians, and potentially, even further back. Interesting though that maybe, mostly, these ancient records were just very basic hieroglyphic or cunieform instructions for food preparation.
Interestingly, the most ancient recipe discovered so far, according to academics are a few ancient tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful. Closer to modern times, we find two interesting cookery books published in the fourteenth century : a cookery book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Amusingly, these two books have no connection with the indian curry that is served today, but rather accounts of the types of meals prepared for the upper classes of the period. During the succeeding few hundred years, the powerful and wealthy houses tried to lay on the most extravagent banquests, and because of this the best cooks and their collection of recipes were at a premium. Even so, it was during the 19th century that fine cooking and cookery books became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to collecting, testing, and writing down recipes to help cooks of their time. Like it or not, the introduction of television gave us celebrity chefs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, permitting everyone to search through thousands of recipes such as those found on this site. |
