The History of Recipes
It is quite possible to follow the history of transcribed cooking instructions back into ancient history, at least as far back into history as the Egyptians, and maybe further still. Having said that, sadly, these early cook books were just very basic pictorial, hieroglyphic or cunieform recipes for preparing food.
Progressing into Roman times around 25BC a roman called Apicius compiled some scripts detailing recipes prepared by wealthy Romans. He recounts how the roman meals were separated into starters, main meal and afters, a style of dining still practiced today. This early Roman chef tells us how the early Romans made use of a wide range of spices, including a few that will be familiar to modern chefs like thyme, fennel and asafoetida. Later on in the 1400s, people returning from the crusades brought us a variety of foods and spices from the Middle-East, including spices like basil and rosemary. These new culinary innovations was responsible for an explosion in manuscripts on cooking, many of which are now in private cookery archives. By the advent of the twentieth century, cookery books were highly popular as a result of increased literacy, people having increased spare time and having more disposable income. |
