The History of Recipes
It is possible to trace the history of written recipes back into the far past, in truth as far as pharonic Egypt, and maybe even further. In practice though, mostly, these early cook books were just very basic hieroglyphic recipes for meal preparation.
The truth of the matter is, the most ancient recipe in existence, according to Professor Solomon Katz, is a collection of clay tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful. Later, we have two interesting cookery books which were published in the 1300s ; one book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. The titles are a little misleading though, these are nothing to do with the curry that is served today, but instead recipes for the types of meals enjoyed by the rich and powerful of the period. During the following few hundred years, the rich families of Wesstern Europe tried to lay on the most extravagent meals, and as a consequence, chefs and their recipe collections were greatly in demand. Notwithstanding that, it wasn`t until the 1800s that formal cookery and cookery books rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, verifying, and publishing recipes to allow everyone to enjoy them. By the time we get to the 1900s, cooking publications are increasing in popularity as a result of more people being able to read, increased leisure time and being a little richer. |
