The History of Recipes
Transcribed cooking instructions as a concept can be tracked far back into antiquity, at least as far back into recorded history as the early Egyptians, and potentially, even further back. Having said that, in the main part, these ancient records were just primitive pictorial, hieroglyphic or cunieform recipes for preparing meals.
In an interesting twist, the oldest recipe found, according to experts is a collection of ancient tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. Later on, in The time of the romans 25BC a roman called Apicius wrote some documents describing recipes enjoyed by wealthy Romans. In his scrolls, he tells us how the roman meals were separated into starters, entrees and afters, something we still use today. Additionally, he tells us how the early Romans used a wide range of aromatic flavours, including a few that will be familiar to modern chefs such as basil, mint and asafoetida. Continuing our culinary historical journey, we find a couple of interesting books dating from the fourteenth century - a recipe book entitled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Perhaps surprisingly, they are nothing to do with the curry that is familiar to us all today, but rather descriptions of the types of meals eaten by the rich and powerful of those days. Later on, in the 15th century, people returning from the crusades brought back many foods, spices and herbs from the East, including spices like coriander, parsley, and rosemary. These new foods and spices was responsible for a surge in manuscripts on cooking, most of which still exist in academic collections. Over the succeeding few centuries, the powerful and wealthy houses competed with each other to serve up the best banquets, and as a result the best chefs and their recipes became highly prized. Nevertheless, it was during the 1800s that cooking and recipe books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to assembling, trying out, and publishing popular recipes of the day. When we get to the 20th century, cook books are in high demand, due to increased literacy, people having increased spare time and disposable income. The TV revolution gave us cooking programs and the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting everybody to access thousands of recipes just like those on our site. |
