The History of Recipes

Transcribed cooking instructions as a concept can be tracked far back into history, certainly as far back as ancient Egypt, and maybe even further. Interesting though that is, in the main part, these ancient cookbooks were just basic pictorial recipes for preparing meals.

In an interesting twist, the oldest recipe discovered so far, according to experts is a collection of clay tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated and blissful.

Later on, in The time of the romans 25BC a roman called Apicius wrote a number of documents describing recipes cooked by wealthy Romans. In his works, he describes how the meals of wealthy Romans were divided into hors d`oeuvres, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the early Romans made use of many different aromatic flavours, including a few that are still present in modern kitchens like basil, rue and dill.

Later on, in the 15th century, people returning from the crusades brought back many foods and herbs from Arab cuisine, including spices such as coriander, parsley, and rosemary. These new foods and tastes caused an increase in recipe books, the majority of which still exist in private cookery archives.

Over the succeeding few centuries, the powerful and rich houses competed with each other to serve the most exotic meals, and because of this chefs and their recipes became highly prized. However, it wasn`t until the nineteenth century that cookery and cookery books became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to assembling, trying out, and recording recipes to allow everyone to enjoy them.

The TV revolution gave us cooking programs and the recipe books that accompanied them.

Which brings us neatly up to date and the internet revolution, permitting everybody to search through thousands of recipes like those on our site.
