The History of Recipes
Written cooking instructions as an idea can be found far back into ancient history, at least as far as the early Egyptians, and potentially, even further back. However, generally, these ancient recipes were just very simple pictorial, hieroglyphic or cunieform recipes for preparing food.
In an interesting twist, the oldest recipe found, according to food historians are a few ancient tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. As we move into The time of the roman empire around 25BC a roman called Apicius created a collection of documents describing recipes enjoyed by the Romans. In his publication, he recounts how the meals were divided into appetizers, main course and dessert, a style of dining still practiced today. He also tells us how the Roman cooks used many herbs and spices, including a few that will be familiar to modern cooks for example bay, fennel and parsley. In the 15th century, people returning from the crusades brought us many spices and herbs from the East, including spices like basil and rosemary. These new foods and spices led to a torrent in recipe manuscripts, many of which still exist in private collections. Over the next few hundred years, the rich and powerful families of the West competed with each other to serve the most exotic banquets, and as a result the best chefs and their collection of recipes could command a high salary. Nevertheless, it was during the nineteenth century that haute cuisine and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to collecting, verifying, and publishing the recipes of their peers. The arrival of TV gave us cooking programs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting us all to access thousands of recipes like the ones you can find on our web site. |
