The History of Recipes
Food historians have proved the existence of recipes far back into antiquity, at least as far as the early Egyptians, and possibly even further than that. In practice though, these, ancient cookbooks were just basic hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the oldest recipe found, according to food historians is a series of clay tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful and blissful. Progressing into The time of the romans 25BC a roman called Apicius wrote some scripts describing recipes enjoyed by wealthy roman citizens. In his works, he tells us how the roman meals were split into hors d`oeuvre, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the Roman cooks were skilled in the use of a good variety of herbs and spices, including a few that will be familiar to modern cooks such as basil, mint and parsley. As our culinary historical trip moves to more modern times we find two interesting books dating from the 14th Century : a book called `Forme of Cury`, and another, similary named `Curye on Inglish`. Despite their titles, these are unconnected to the indian food that is served today, but rather descriptions of the types of meals on the menus of the upper classes of the time. In the 15th century, people returning from the crusades brought back many foods, spices and herbs from the Middle-East, such as parsley, basil and rosemary. The introduction of these new culinary ideas prompted a torrent in recipe manuscripts, the majority of which still exist in academic collections. Over the next few centuries, the powerful and wealthy houses competed with each other to serve up the best banquets, and as a result cooks and their collection of recipes could command a high salary. However, it wasn`t until the nineteenth century that haute cuisine and cookery books really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to collecting, verifying, and publishing recipes for their fellow cooks to enjoy. By the arrival of the twentieth century, cook books are in high demand, due to increased literacy, people having more spare time and having more money to spend. |
