The History of Recipes
It is quite feasible to follow the history of written cooking instructions way back into distant history, in fact as far back as pharonic Egypt, and quite possibly further than that. In practice though, in the main part, these old recipes were just simple hieroglyphic instructions for meal preparation.
Fascinatingly, the most ancient recipe discovered so far, according to Professor Solomon Katz, are a few stone tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. As we move into The time of the romans 25BC a roman called Apicius wrote some documents showing how to cook the recipes cooked by wealthy Romans. In his works, Apicius tells us how the meals were divided into starters, main meal and afters, something we still use today. Aspicius also informs us how the early Romans used many different herbs and spices, including a few you will know such as basil, fennel and parsley. Later, in the 15th century, people returning from the crusades brought back a variety of foods and spices from Arab countries, such as parsley and basil. These new spices and herbs led to an eruption in manuscripts on cookery, most of which still exist in private libraries. During the next few hundred years, the powerful and wealthy houses strove to serve up the most extravagent meals, and as a consequence, cooks and their recipe collections were highly sought after. Even so, it was during the 19th century that cooking and recipe books became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to collating, verifying, and writing down recipes for their fellow cooks to enjoy. By the time we get to the twentieth century, cook books are greatly in demand as a result of more people being able to read, more spare time and being a little richer. |
