The History of Recipes
We are able to track the history of `recipes` far back into the distant past, in fact as far into history as the ancient Egyptians, and maybe further still. In practice though, generally, these ancient cookbooks were just primitive hieroglyphic or cunieform recipes for preparing meals.
Interestingly, the most ancient recipe found, according to experts in ancient history are some tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated. During Roman times 25BC a roman called Apicius wrote a few documents showing how to cook the recipes enjoyed by wealthy Romans. In his scrolls, Apicius describes how the roman meals were split into starters, main meal and afters, something that is very familiar to us today. This early Roman chef informs us how the ancient Romans were skilled in the use of a wide range of spices, including a few that are still present in modern kitchens such as bay, mint and asafoetida. Closer to modern times, we find a couple of books which date from the 1300s : a book titled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Amusingly, they are unconnected to the spicy food that appears on menues today, but instead descriptions of the types of food on the menues of the nobility of that time. Later, in the 15th century, people returning from the crusades brought back a variety of spices and herbs from the East, including spices such as coriander, parsley, basil and rosemary. These new herbs and spices was responsible for an eruption in manuscripts on cookery, some of which are now in private collections. By the time we get to the twentieth century, cook books were greatly in demand mostly due to increased literacy, leisure time and a general increase in wealth. Like it or not, the introduction of TV gave us TV chefs and the recipe books that accompanied them. Which brings us neatly up to date and the invention of the internet, permitting everyone to access massive numbers of recipes just like those on this recipe site. |
