The History of Recipes
Transcribed cooking instructions as a concept can be tracked back into the far past, at least as far into history as the ancient Egyptians, and possibly even further. However, these, early cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the oldest recipe found, according to Professor Solomon Katz, are a few ancient tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful. Progressing into The time of the romans around 25BC a roman called Apicius assembled a collection of scripts describing recipes cooked by wealthy roman citizens. In his publication, Apicius describes how the meals of wealthy Romans were separated into appetizers, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef tells us how the cooks of Roman times used a good variety of spices and herbs, including a few you will know for example bay, rue and dill. During the following few centuries, the upper-class families of Wesstern Europe competed with each other to lay on the most extravagent banquests, and as a result the best cooks and their collection of recipes were highly sought after. Notwithstanding that, it was during the 1800s that formal cookery and cookery books became popular. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, devoted their lives to collecting, testing, and writing down recipes common in their social group. By the advent of the 1900s, cooking books are in high demand, as a result of increased literacy, more leisure time and being a little richer. Like it or not, the introduction of TV brings us cooking programs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of computers and the internet, allowing everybody to access thousands of recipes such as those found on this site. |
