The History of Recipes
Written recipes as a concept can be found way back into ancient history, certainly as far back into recorded history as pharonic Egypt, and maybe even further. Interesting though that maybe, these, ancient cook books were just basic hieroglyphic or cunieform instructions for preparing meals.
In an interesting twist, the oldest recipe in existence, according to historians are a few ancient tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `exhilarated, wonderful and blissful`. Moving our culinary historical trip onwards, we have a couple of recipe books which were published in the 1300s : one book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Although the titles sound familiar, these books are unconnected to the indian food that appears on menues today, but instead descriptions of the types of food enjoyed by the rich people of those days. Over the succeeding few centuries, the rich families of Europe competed to serve the most extravagent meals, and as a consequence, chefs and their collection of recipes were much in demand. Even so, it wasn`t until the 19th century that fine cookery and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to collecting, verifying, and publishing recipes to help cooks of their time. When we get to the 20th century, cooking publications are highly popular mostly as a result of more people being able to read, leisure time and having more money. |
