The History of Recipes
We are able to read the history of `recipes` way back into distant history, certainly as far into history as the Egypt of the Pharoahs, and potentially, even further back. In practice though, generally, these old cook books were just very basic pictorial instructions for meal preparation.
As we move into The time of the romans around 25BC a roman called Apicius assembled a few documents describing recipes cooked by his fellow Romans. In his scrolls, Apicius recounts how the meals were separated into starters, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the Romans used many different spices and herbs, including a few that are still present in modern kitchens such as thyme, mint and dill. During the next few centuries, the upper-class families of Wesstern Europe competed with each other to lay on the most extravagent banquests, and consequentially the best chefs and their recipes increased in prestige. Notwithstanding that, it was during the nineteenth century that fine cooking and recipe publications rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collating, testing, and recording recipes for their fellow cooks to enjoy. The revolution that is television brings us cooking programs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everyone to access thousands of recipes like those on this site. |
