The History of Recipes
We can track the history of `recipes` far back into history, at least as far back as the Egyptians, and possibly even further than that. Interesting though that is, sadly, these early records were just simple pictorial recipes for meal preparation.
Later on, in Roman times around 25BC a roman called Apicius wrote a number of documents detailing recipes enjoyed by his fellow Romans. In his works, he recounts how the meals were split into appetizers, main course and dessert, a very modern way of dining. Aspicius informs us how the cooks of Roman times were skilled in the use of a good variety of herbs, including a few you will know for example basil, mint and dill. Later on in the 1400s, people returning from the crusades brought back a variety of foods, spices and herbs from Arab cooking, such as coriander, basil and rosemary. The introduction of these new culinary ideas led to an increase in publications on food, the majority of which are now in private cookery archives. By the advent of the twentieth century, cook books were highly popular due to more people being able to read, people having more free time and having more disposable income. |
