The History of Recipes
Written recipes as an idea can be tracked far back into the distant past, certainly as far into history as the early Egyptians, and possibly even further. Interesting though that maybe, generally, these old records were just primitive pictorial, hieroglyphic or cunieform instructions for meal preparation.
Fascinatingly, the most ancient recipe discovered, according to experts is a series of tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful. As we move into The time of the roman empire 25BC a roman called Apicius compiled a few documents showing how to cook the recipes enjoyed by his fellow Romans. In his publication, Apicius recounts how the meals were separated into starters, entrees and dessert, something we still use today. This early Roman chef tells us how the cooks of his times were skilled in the use of many herbs, including a few you will know such as bay, rue and asafoetida. Over the next few centuries, the rich and powerful families of Europe strove to serve up the most exotic meals, and consequentially cooks and their recipe collections became highly prized. Notwithstanding that, it was during the 1800s that haute cuisine and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to collating, verifying, and writing down popular recipes of the day. By the arrival of the twentieth century, cookery publications are greatly in demand mostly due to better eduction, people having more free time and disposable income. |
