The History of Recipes
It is quite feasible to prove the history of written cooking instructions far back into the far past, in truth as far back as the early Egyptians, and maybe even further. Interesting though that maybe, sadly, these ancient records were just primitive hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the most ancient recipe in existence, according to experts in ancient history is a series of stone tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `blissful`. As we move into The time of the romans 25BC a roman called Apicius created a number of documents which described recipes cooked by his fellow Romans. In his works, Apicius recounts how the roman meals were separated into appetizers, main course and afters, a style of dining still practiced today. Aspicius also describes how the early Romans made use of many different spices, including a few that will be familiar to modern cooks such as basil, mint and dill. Later, in the 15th century, people returning from the crusades brought us many new foods, spices and herbs from Arab countries, including spices such as parsley, basil and rosemary. These new spices and herbs led to an increase in cookery books, many of which are now in private collections. During the next few hundred years, the families of Europe tried to offer the best banquets, and as a consequence, chefs and their collection of recipes could command a high salary. Even so, it was during the nineteenth century the formal cooking and recipe collections became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to assembling, testing, and publishing popular recipes of the day. By the time we get to the twentieth century, cookbooks were starting to become popular due to more people being able to read, leisure time and a general increase in wealth. |
