The History of Recipes
It is actually possible to trace the history of written recipes back into distant history, in truth as far back as early Egypt, and possibly even further. However, mostly, these ancient recipes were just basic pictorial instructions for meal preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to academics are some ancient tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. As we move into Roman times 25BC a man called Apicius compiled some documents which described recipes cooked by the Romans. In his scrolls, Apicius describes how the roman meals were split into starters, entrees and dessert, a style of dining still practiced today. He also recounts how the Romans made use of many different spices, including a few you will know for example thyme, mint and asafoetida. During the following few centuries, the wealthy families of Europe tried to offer the most extravagent meals, and because of this cooks and their recipe collections were much in demand. Even so, it was during the 1800s that haute cuisine and recipe collections reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, testing, and writing down recipes common in their social group. By the advent of the 1900s, recipe books were starting to become popular mostly as a result of higher levels of literacy, more spare time and having more disposable income. The revolution that is television brought us celebrity TV chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the internet revolution, permitting everybody to search through massive numbers of recipes like those on this web site. |
