The History of Recipes
Historians have proved the existence of recipes way back into history, in truth as far into history as ancient Egypt, and maybe even further. However, these, early cookbooks were just primitive pictorial instructions for meal preparation.
Progressing into The time of the romans 25BC a roman called Apicius compiled a collection of scripts which described recipes enjoyed by his fellow Romans. In his works, Apicius tells us how the meals were separated into starters, main meal and afters, a style of dining still practiced today. Additionally, he recounts how the ancient chefs were skilled in the use of a wide range of aromatic flavours, including a few that will be familiar to modern cooks like bay, fennel and parsley. In the 15th century, knights returning from the crusades brought back many new foods and herbs from the East, including spices such as rosemary and coriander. The introduction of these new foods and spices led to an explosion in manuscripts on cooking, many of which still exist in academic collections. The introduction of television brings us celebrity chefs and the recipe books that accompanied them. Which brings us neatly to the present day and the internet revolution, permitting us all to access thousands of recipes just like those on sites such as the one you are reading now. |
