The History of Recipes
Recipes as a concept can be observed back into the far past, certainly as far back into history as the Egyptians, and possibly even further than that. Interesting though that maybe, generally, these ancient recipes were just basic hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the oldest recipe discovered, according to experts in ancient history is a series of stone tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful. Progressing into The time of the roman empire around 25BC a man called Apicius created a number of scripts detailing recipes enjoyed by the Romans. In his publication, Apicius recounts how the meals were split into appetizers, main meal and dessert, a style of dining still practiced today. He also recounts how the Roman cooks used a wide range of spices, including a few that will be familiar to modern cooks for example thyme, mint and asafoetida. Over the following few centuries, the rich families of the West competed to serve up the best banquets, and consequentially cooks and their collection of recipes increased in prestige. Even so, it was during the 19th century that haute cuisine and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to assembling, testing, and publishing the recipes of their peers. The arrival of TV brings us TV cooks and the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, permitting us all to search through thousands of recipes just like those on this web site. |
