The History of Recipes
It is quite possible to follow the history of recipes far back into antiquity, in truth as far back as the Egyptians, and possibly even further than that. Interesting though that is, sadly, these early cookbooks were just very simple hieroglyphic or cunieform recipes for preparing food.
In fact, the most ancient recipe discovered, according to experts is a collection of stone tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. During Roman times 25BC a roman called Apicius compiled a collection of scripts which described recipes enjoyed by wealthy roman citizens. In his works, he describes how the meals were split into starters, main meal and desserts, a style of dining still practiced today. Aspicius also tells us how the ancient chefs used many different spices and herbs, including a few you will know such as thyme, mint and parsley. During the succeeding few centuries, the rich and powerful families of Europe tried to serve the most exotic meals, and as a result cooks and their recipe collections were highly sought after. Nevertheless, it was during the 19th century that cookery and recipe collections became really popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to assembling, testing, and writing down popular recipes of the day. By the arrival of the 1900s, cookery publications are increasing in popularity mostly due to increased literacy, people having more free time and being a little richer. Like it or not, the introduction of television brings us celebrity chefs and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of computers and the internet, permitting us all to access thousands of recipes like those on this site. |
