The History of Recipes
It is quite feasible to track the history of transcribed cooking instructions way back into ancient history, in truth as far into history as pharonic Egypt, and maybe further still. Having said that, sadly, these old cook books were just very simple hieroglyphic instructions for preparing food.
As we move into The time of the roman empire 25BC a man called Apicius assembled a collection of scripts describing recipes cooked by the Romans. In his works, Apicius recounts how the roman meals were divided into hors d`oeuvre, entrees and dessert, something that is very familiar to us today. Aspicius recounts how the ancient Romans were skilled in the use of many spices, including a few that will be familiar to modern chefs such as thyme, fennel and parsley. Over the next few centuries, the powerful families of the West competed with each other to lay on the most exotic banquets, and because of this cooks and their recipe collections could command a high salary. Nevertheless, it wasn`t until the 1800s that haute cuisine and recipe publications became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collating, testing, and publishing recipes for their fellow cooks to enjoy. The introduction of television brought us cooking programs and the accompanying recipe books. And that brings us to the present day and the internet revolution, permitting everyone to access massive numbers of recipes like the ones you can find on this recipe site. |
