The History of Recipes
Historians have traced the existance of recipes back into ancient history, in fact as far as early Egypt, and possibly even further. However, generally, these early records were just very basic hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the most ancient recipe discovered so far, according to experts is a series of stone tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful. During Roman times around 25BC a man called Apicius created some scripts showing how to cook the recipes prepared by wealthy Romans. In his publication, he recounts how the meals of wealthy Romans were split into starters, entrees and dessert, a very modern way of dining. Aspicius describes how the Roman chefs made use of many different herbs and spices, including some that we all recognise like bay, rue and parsley. In the fifteenth century, knights returning from the crusades brought back many new foods and herbs from Arab cuisine, such as parsley and basil. These new foods and spices was responsible for an outbreak in recipe publications, most of which are now in academic collections. Over the following few hundred years, the upper-class families of Europe strove to lay on the most extravagent meals, and because of this cooks and their recipe collections were highly sought after. Nevertheless, it was during the 1800s that haute cuisine and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, verifying, and writing down recipes to help cooks of their time. Like it or not, the introduction of television brings us celebrity TV chefs and the demand for the accompanying recipe books. And that brings us to the present day and the internet revolution, allowing us all to search through massive numbers of recipes like those on our web site. |
