2 cup dried beans, soaked
1 onion, chopped
2 carrots, peeled & sliced
1 celery stick, sliced
2 tomatoes, chopped
1/2 cup olive oil
1 bay leaves
1 tsp salt
1 pinch pepper
1 tsp cumin
3 pt stock
Directions
Cook the soaked beans in fresh water for 10 minutes. Drain.
In a soup pot, heat the oil & gently fry the onion. Add the rest of
the vegetables & the seasonings. Stir well & add the beans. Ensure
that all the vegetables are covered with oil & pour in the stock.
Allow to simmer till the beans are cooked & the vegetables are tender.

The History of Recipes
It is quite possible to trace the history of written cooking instructions far back into ancient history, in truth as far as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that is, mostly, these early records were just simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
Moving on, there were two interesting cookery books published in the 14th Century ; a cookery book published under the title `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are somewhat misleading tho`, these are unconnected to the spicy food that is popular today, but instead accounts of the types of meals eaten by the nobility of the time. Later, in the 15th century, people returning from the crusades brought us many new foods and spices from Arab cooking, such as rosemary and coriander. These new foods and tastes prompted a torrent in cookery books, many of which are kept safe in private cookery archives. The revolution that is television gave us celebrity chefs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, allowing everyone to access massive numbers of recipes such as those found on our web site. |
