The History of Recipes
Historians have tracked the existance of recipes back into history, in truth as far back into recorded history as pharonic Egypt, and potentially, even further back. Having said that, sadly, these early cookbooks were just simple hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the most ancient recipe in existence, according to experts in ancient history are some stone tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`. Progressing into The time of the romans 25BC a man called Apicius compiled a collection of scripts which described recipes prepared by wealthy Romans. In his works, he describes how the roman meals were separated into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the Romans were skilled in the use of a good variety of spices and herbs, including a few you will know such as thyme, mint and dill. In the 15th century, the Crusaders brought back many new spices and herbs from Arab cooking, including spices such as coriander, parsley, and rosemary. The introduction of these new culinary ideas created an outbreak in publications on food, the majority of which still exist in private libraries. Over the next few centuries, the wealthy families of the West tried to lay on the most exotic meals, and as a consequence, chefs and their recipes increased in prestige. However, it was during the 1800s that formal cookery and cookery books really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collecting, testing, and publishing the recipes that were being prepared for the better households. By the arrival of the twentieth century, cooking books were increasing in popularity mostly due to more people being able to read, more spare time and a general increase in wealth. The introduction of television brought us celebrity chefs and the recipe books that accompanied them. Which brings us neatly up to date and the internet revolution, permitting everybody to access massive numbers of recipes such as those found on this site. |
