The History of Recipes
Transcribed cooking instructions as a concept can be traced far back into antiquity, certainly as far back as early Egypt, and quite possibly further than that. Having said that, these, ancient records were just very simple hieroglyphic instructions for food preparation.
Progressing into The time of the roman empire 25BC a man called Apicius compiled some documents describing recipes prepared by his fellow Romans. In his scrolls, he tells us how the roman meals were divided into hors d`oeuvre, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the Roman chefs used many different herbs and spices, including a few that will be familiar to modern chefs for example basil, mint and asafoetida. For the centuries that followed, the wealthy families of Europe competed with each other to serve up the most exotic meals, and as a result cooks and their collection of recipes were greatly in demand. Notwithstanding that, it wasn`t until the nineteenth century that cooking and cookery books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to assembling, verifying, and publishing recipes common in their social group. The introduction of the TV brought us TV cookery programs and the recipe books that accompanied them. And that neatly brings us to the present day and the internet revolution, allowing us all to search through thousands of recipes like those on our site. |
