The History of Recipes
We can track the history of `recipes` far back into ancient history, certainly as far back into recorded history as the Egyptians, and maybe even further. However, in the main part, these ancient recipes were just primitive hieroglyphic instructions for food preparation.
Fascinatingly, the most ancient recipe found, according to experts in ancient history are a few clay tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful and exhilarated. Later, we find a couple of interesting recipe books published in the 1300s - a cookery book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Perhaps surprisingly, these two books are not about the indian curry that appears on menues today, but instead accounts of the types of food served to the upper classes of the period. Later on, in the 15th century, knights returning from the crusades brought us many new foods and spices from Arab cuisine, including spices such as coriander, parsley, basil and rosemary. These new foods and spices led to an increase in recipe books, some of which still exist in private libraries. Over the succeeding few centuries, the rich and powerful families of Wesstern Europe competed to serve up the most extravagent banquests, and because of this chefs and their recipe collections were much in demand. Notwithstanding that, it wasn`t until the nineteenth century that cooking and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to collating, verifying, and writing down recipes to help cooks of their time. By the time we get to the 20th century, cook books are in high demand, mostly as a result of increased literacy, increased leisure time and a general increase in wealth. The revolution that is television brought us celebrity TV chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, allowing us all to search through thousands of recipes such as those found on this web site. |
