The History of Recipes
Academics have tracked the existence of recipes way back into the far past, in fact as far into history as the early Egyptians, and maybe further still. However, sadly, these early cook books were just primitive hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the most ancient recipe discovered, according to Professor Solomon Katz, is a collection of stone tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful. As our culinary historical trip moves to more modern times we have some books dating from the 14th Century - one book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Surprisingly, these are not about the indian curry that appears on menues today, but instead accounts of the types of meals prepared by the cooks of the rich and powerful of the time. In the 15th century, knights returning from the crusades brought back a variety of spices and herbs from the holy lands, including coriander, parsley, and basil. These new herbs and spices prompted an increase in books on cooking, some of which are kept safe in private cookery archives. Over the next few centuries, the upper-class families of Europe strove to serve up the most exotic banquets, and consequentially the best cooks and their recipes were highly sought after. Nevertheless, it wasn`t until the nineteenth century that fine cooking and recipe publications became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to collating, testing, and recording recipes for their fellow cooks to enjoy. The introduction of television brings us TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes like those on this site. |
