The History of Recipes
We can trace the history of meal recipes far back into history, in truth as far back into history as early Egypt, and maybe even further. Having said that, sadly, these old cook books were just very basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
In an interesting twist, the most ancient recipe discovered, according to experts are a few tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful. Much later, in Roman times a roman called Apicius created some scripts showing how to cook the recipes enjoyed by wealthy roman citizens. In his works, Apicius tells us how the meals were divided into hors d`oeuvres, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the Romans used a wide range of aromatic flavours, including a few that are still present in modern kitchens for example thyme, rue and dill. Later on, in the 15th century, people returning from the crusades brought back a variety of spices and herbs from the holy lands, such as rosemary and coriander. These new spices and herbs caused an increase in publications on food, some of which still exist in private collections. Over the succeeding few hundred years, the powerful and rich strove to serve the most exotic banquets, and consequentially cooks and their recipe collections became highly prized. Even so, it wasn`t until the nineteenth century that fine cookery and recipe publications really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, trying out, and recording recipes common in their social group. The TV revolution gave us TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to access thousands of recipes just like those on sites such as the one you are reading now. |
