The History of Recipes
It is quite feasible to track the history of written cooking instructions way back into the far past, in truth as far back into recorded history as the Egyptians, and maybe even further. In practice though, in the main part, these early cook books were just very simple pictorial recipes for preparing meals.
The truth of the matter is, the most ancient recipe found, according to Professor Solomon Katz, is a series of ancient tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. As we move into Roman times around 25BC a roman called Apicius assembled a collection of scripts which described recipes enjoyed by wealthy Romans. He describes how the meals of wealthy Romans were split into hors d`oeuvres, main course and dessert, something we still use today. Aspicius also recounts how the cooks of his times used many different spices, including a few that are still present in modern kitchens like bay, rue and parsley. Moving on, we have a couple of interesting cookery books from the 1300s - one book called `Forme of Cury`, and another called `Curye on Inglish`. The titles are a little misleading though, these books are unconnected to the indian food that is familiar to us all today, but instead accounts of the types of food prepared for the rich and wealthy people of that time. Later, in the 15th century, knights returning from the crusades brought back many new foods, spices and herbs from the East, including spices such as coriander, basil and rosemary. The introduction of these new tastes caused a torrent in recipe publications, most of which are now in private cookery archives. During the following few centuries, the upper-class families of Wesstern Europe tried to serve the best banquets, and as a result chefs and their recipes were greatly in demand. Notwithstanding that, it wasn`t until the nineteenth century that haute cuisine and recipe books became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to collating, testing, and recording recipes to help cooks of their time. By the advent of the 1900s, cooking books are increasing in popularity due to increased literacy, increased leisure time and being a little richer. Like it or not, the introduction of TV brings us celebrity chefs and the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, allowing everyone to access thousands of recipes like those on this recipe site. |
