The History of Recipes
It is quite feasible to follow the history of written cooking instructions far back into ancient history, in fact as far back as early Egypt, and possibly even further than that. Having said that, these, early recipes were just very simple hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the most ancient recipe in existence, according to historians are a few ancient tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful. As we move into The time of the romans 25BC a roman called Apicius created a collection of documents showing how to cook the recipes cooked by wealthy roman citizens. He tells us how the roman meals were divided into appetizers, main course and dessert, something that is very familiar to us today. He also describes how the early Romans used many different herbs, including many that are still in use today like basil, mint and parsley. Closer to modern times, there were some interesting books which appeared in the 14th Century - one book published under the title `Forme of Cury`, and another, similary titled `Curye on Inglish`. Don`t be fooled by the titles though, these two books are unconnected to the curry that appears on menues today, but rather descriptions of the types of meals eaten by the nobility of that time. In the fifteenth century, people returning from the crusades brought us many new foods, spices and herbs from Arab cooking, including spices such as coriander, parsley, and rosemary. These new herbs and spices was responsible for an explosion in recipe manuscripts, the majority of which are now in private collections. During the succeeding few hundred years, the rich and powerful families of Europe tried to serve up the best banquets, and as a consequence, chefs and their recipes increased in prestige. Nevertheless, it was during the 19th century that haute cuisine and cookery books rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to collating, verifying, and writing down recipes common in their social group. By the arrival of the 20th century, cookery publications are increasing in popularity due to more people being able to read, leisure time and a general increase in wealth. |
