1 cup diced onions
1 cup diced celery
1 cup diced carrots
1 cup diced mushrooms
3/4 cup butter
1/2 cup flour
1 tsp dry mustard
5 cup chicken or vegetable stock
1 bunch broccoli
11 fl beer (use a can or bottle and save, a swallow for the
6 oz cheddar cheese, grated
2 tbsp grated parmesan cheese
1 salt
1 pepper
Directions
Saute the diced vegetables in butter. Mix flour and mustard into
saut\zed vegetables. Add the chicken or vegetable stock to mixture
and cook for five minutes. Break broccoli into small flowerets; cut
stems into bite-sizes pieces. Steam until tender-crisp. Add beer and
cheeses to the soup. Simmer 10-15 minutes. Check seasonings. To
serve, place some broccoli into a soup bowl and ladle the soup over
it. NOTES: Because of the cheese, this soup doesn't survive a night
in the refrigerator very well.

The History of Recipes
It is quite feasible to follow the history of recipes back into antiquity, certainly as far as the Egypt of the Pharoahs, and maybe even further. In practice though, these, old recipes were just simple pictorial recipes for food preparation.
Interestingly, the oldest recipe discovered so far, according to historians is a series of clay tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. Progressing into The time of the romans around 25BC a man called Apicius compiled a collection of scripts detailing recipes prepared by the Romans. In his publication, he tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the ancient cooks were skilled in the use of a good variety of spices, including some familiar names like bay, rue and parsley. Later, in the 15th century, the Crusaders brought back a variety of foods and spices from middle-east cuisine, including spices such as coriander, parsley, and rosemary. The introduction of these new culinary ideas caused a torrent in recipe publications, the majority of which still exist in private libraries. By the time we get to the twentieth century, cooking books were highly popular as a result of higher levels of literacy, leisure time and having more money. Like it or not, the introduction of TV brought us TV cooks and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing us all to access massive numbers of recipes such as those found on this recipe site. |
