The History of Recipes
It is quite possible to follow the history of recipes far back into the distant past, in truth as far as ancient Egypt, and possibly even further than that. However, in the main part, these old records were just very simple hieroglyphic instructions for preparing food.
In fact, the most ancient recipe in existence, according to Professor Solomon Katz, are a few stone tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful. Progressing into The time of the roman empire 25BC a roman called Apicius created a collection of scripts which described recipes prepared by wealthy Romans. In his works, he describes how the meals were split into starters, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius recounts how the ancient chefs made use of a good variety of spices, including a few that are still present in modern kitchens such as basil, mint and asafoetida. For the centuries that followed, the upper classes tried to lay on the most exotic meals, and as a consequence, cooks and their recipe collections were highly sought after. Nevertheless, it was during the 1800s that cooking and recipe publications reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collecting, testing, and recording recipes for their fellow cooks to enjoy. By the advent of the 20th century, cooking books are greatly in demand mostly as a result of more people being able to read, more spare time and being a little richer. The revolution that is television brings us TV chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing us all to search through thousands of recipes such as those found on this site. |
