The History of Recipes
It is quite feasible to prove the history of written cooking instructions back into history, at least as far back into history as the early Egyptians, and maybe further still. Interesting though that is, sadly, these ancient recipes were just very simple pictorial recipes for preparing meals.
Interestingly, the oldest recipe discovered, according to food historians is a series of ancient tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. As we move into The time of the romans 25BC a man called Apicius compiled a few scripts describing recipes prepared by wealthy Romans. In his scrolls, he describes how the meals were separated into hors d`oeuvres, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the early Romans used a wide range of spices, including a few that will be familiar to modern cooks for example basil, mint and parsley. Later, in the 15th century, knights returning from the crusades brought us many foods, spices and herbs from the holy lands, including coriander, parsley, and rosemary. These new foods and tastes created an eruption in recipe books, some of which still exist in private cookery archives. During the next few hundred years, the wealthy families of Wesstern Europe competed with each other to offer the best banquets, and consequentially the best cooks and their recipes could command a high salary. However, it wasn`t until the 19th century that cookery and recipe publications really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to assembling, testing, and publishing recipes common in their social group. Like it or not, the introduction of TV brought us TV cookery programs and the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everybody to search through thousands of recipes just like those on this web site. |
