The History of Recipes
We can follow the history of meal recipes far back into the distant past, certainly as far as pharonic Egypt, and maybe further still. In practice though, generally, these old records were just very simple pictorial, hieroglyphic or cunieform recipes for preparing food.
In fact, the oldest recipe in existence, according to academics is a series of ancient tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful and exhilarated. During the time of the Roman Empire a roman called Apicius compiled a collection of scripts which described recipes prepared by his fellow Romans. In his publication, he tells us how the roman meals were split into hors d`oeuvres, main meal and dessert, a style of dining still practiced today. He also recounts how the cooks of Roman times used a wide range of herbs and spices, including many that are still in use today for example thyme, fennel and dill. In the fifteenth century, knights returning from the crusades brought back many new foods and spices from middle-east cuisine, including spices such as coriander, parsley, and basil. The introduction of these new herbs and spices caused an explosion in recipe manuscripts, many of which are now in private cookery archives. The introduction of television brings us celebrity chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, allowing everybody to search through thousands of recipes just like those on our web site. |
