2 cup apples -- peeled, shredded
1 1/3 cup sugar
1 cup cranberries -- chopped
1 cup carrots -- shredded
1 cup black walnuts -- chopped
2 1/2 cup all-purpose flour
1 tbsp double-acting baking powder
2 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
2 eggs -- beaten
1/2 cup vegetable oil
Directions
In a large mixing bowl, combine apples and sugar. Gently fold in
chopped cranberries, carrots, and nuts. Combine dry ingredients; add
to mixing bowl. Mix w ell to moisten dry ingredients. Combine eggs
and oil; stir into apple mixture. Fill 18 greased muffin tins 2/3
full. Bake at 375 degrees for 20-25 minutes. Cool 5 minutes before
removing from pans.
Yield: 18 muffins

The History of Recipes
It is possible to trace the history of `recipes` far back into the distant past, certainly as far as ancient Egypt, and quite possibly further than that. In practice though, generally, these old recipes were just very basic hieroglyphic recipes for meal preparation.
The truth of the matter is, the oldest recipe found, according to food historians are some tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated and blissful. Later on, in The time of the roman empire 25BC a roman called Apicius created a few scripts detailing recipes prepared by wealthy Romans. In his scrolls, Apicius recounts how the meals were separated into hors d`oeuvre, main meal and afters, a style of dining still practiced today. Aspicius also tells us how the early Romans made use of a good variety of aromatic flavors, including some familiar names for example thyme, rue and dill. Later, in the fifteenth century, people returning from the crusades brought us a variety of foods and herbs from the East, including spices like coriander, basil and rosemary. These new culinary innovations caused an explosion in manuscripts on cookery, many of which still exist in academic collections. During the following few hundred years, the families of Europe competed to lay on the most exotic meals, and as a result the best chefs and their recipes could command a high salary. Notwithstanding that, it wasn`t until the 19th century that cooking and recipe collections became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collecting, trying out, and writing down recipes common in their social group. By the time we get to the 1900s, cookbooks were highly popular mostly as a result of increased literacy, people having increased free time and having more money to spend. The arrival of television gave us TV cooks and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes such as those found on sites such as this. |
