The History of Recipes
We are able to follow the history of `recipes` back into antiquity, at least as far back into recorded history as the ancient Egyptians, and quite possibly further than that. Having said that, these, old cookbooks were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the oldest recipe discovered so far, according to Professor Solomon Katz, is a series of ancient tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `blissful`. Later on, in The time of the roman empire around 25BC a man called Apicius compiled a collection of documents describing recipes prepared by the Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into appetizers, main course and afters, something we still use today. Additionally, he tells us how the cooks of his times made use of a good variety of herbs, including many that are still in use today for example bay, rue and asafoetida. During the following few hundred years, the powerful families of Europe competed with each other to offer the most exotic banquets, and because of this the best cooks and their collection of recipes were highly sought after. Notwithstanding that, it was during the nineteenth century that formal cookery and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to collecting, verifying, and recording recipes common in their social group. By the advent of the 20th century, cooking books were in great demand, mostly due to higher levels of literacy, more leisure time and being a little richer. |
