The History of Recipes
Recipes as a concept can be observed far back into history, certainly as far back into recorded history as pharonic Egypt, and possibly even further than that. Having said that, generally, these old records were just basic pictorial, hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the oldest recipe discovered so far, according to Professor Solomon Katz, are a few ancient tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful. Progressing into The time of the roman empire around 25BC a roman called Apicius wrote a number of scripts detailing recipes prepared by the Romans. In his works, he tells us how the roman meals were separated into hors d`oeuvre, entrees and dessert, a very modern way of dining. He also describes how the ancient cooks were skilled in the use of a wide range of aromatic flavors, including a few you will know for example bay, fennel and asafoetida. As our culinary historical trip moves to more modern times we find a couple of cookery books which were published in the 14th Century : one book published under the title `Forme of Cury`, and another called `Curye on Inglish`. Perhaps surprisingly, these have no connection with the curry that we all know today, but rather descriptions of the types of food prepared by the chefs of the rich and powerful of those days. Later on in the 1400s, the Crusaders brought back a variety of foods, spices and herbs from Arab countries, such as coriander, parsley, and basil. These new herbs and spices created an outbreak in books on cookery, most of which are kept safe in private collections. By the time we get to the 20th century, cooking books were greatly in demand due to more people being able to read, people having more free time and a general increase in wealth. The introduction of the TV brought us TV chefs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing us all to access massive numbers of recipes like those on sites such as the one you are reading now. |
