The History of Recipes
We can track the history of written recipes back into the distant past, certainly as far as the early Egyptians, and possibly even further than that. Interesting though that maybe, mostly, these old recipes were just basic hieroglyphic or cunieform recipes for preparing meals.
In fact, the oldest recipe discovered, according to historians is a collection of ancient tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated. Progressing into Roman times around 25BC a man called Apicius assembled some documents detailing recipes prepared by wealthy Romans. In his works, Apicius tells us how the roman meals were divided into appetizers, entrees and afters, a very modern way of dining. This early Roman chef describes how the ancient chefs were skilled in the use of many aromatic flavours, including a few you will know like basil, mint and parsley. For the next few years, the powerful families of Europe competed to lay on the best banquets, and consequentially cooks and their collection of recipes were greatly in demand. Even so, it was during the 1800s that cooking and recipe books became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to collating, trying out, and writing down recipes to allow everyone to enjoy them. By the advent of the twentieth century, recipe publications were highly popular due to better eduction, people having more free time and having more money. |
