The History of Recipes
Transcribed cooking instructions as a concept can be observed way back into the far past, in fact as far back into history as ancient Egypt, and potentially, even further back. Interesting though that maybe, generally, these ancient cook books were just very basic hieroglyphic instructions for preparing meals.
Much later, in Roman times a roman called Apicius assembled a collection of scripts showing how to cook the recipes enjoyed by his fellow Romans. In his publication, he describes how the meals were separated into appetizers, main meal and dessert, a very modern way of dining. Additionally, he describes how the Roman chefs made use of a good variety of herbs and spices, including a few that are still present in modern kitchens for example basil, mint and asafoetida. Later on, in the 15th century, knights returning from the crusades brought back a variety of spices and herbs from Arab cuisine, including spices like parsley and basil. These new spices and herbs created an explosion in publications on food, most of which are now in private collections. The TV revolution brings us TV chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the internet revolution, allowing us all to search through massive numbers of recipes such as those found on our web site. |
