The History of Recipes
Food historians have proved the existance of recipes way back into the distant past, in fact as far as the early Egyptians, and possibly even further than that. Interesting though that maybe, mostly, these ancient cookbooks were just primitive pictorial instructions for preparing meals.
Later on, in Roman times 25BC a man called Apicius compiled some documents showing how to cook the recipes cooked by wealthy roman citizens. In his works, he recounts how the meals were split into hors d`oeuvre, main course and dessert, something that is very familiar to us today. He also recounts how the chefs of Roman times used many different spices, including a few you will know like thyme, rue and dill. During the succeeding few centuries, the wealthy families of Europe strove to offer the most extravagent meals, and because of this the best cooks and their collection of recipes were greatly in demand. However, it wasn`t until the nineteenth century that fine cookery and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to collating, testing, and writing down recipes to allow everyone to enjoy them. By the arrival of the 1900s, recipe books were greatly in demand mostly as a result of higher levels of literacy, more leisure time and being a little richer. |
