The History of Recipes
It is quite possible to follow the history of transcribed cooking instructions back into ancient history, at least as far back into recorded history as early Egypt, and quite possibly further than that. Interesting though that is, in the main part, these old cookbooks were just very simple hieroglyphic recipes for meal preparation.
In fact, the oldest recipe found, according to academics is a collection of stone tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated and blissful. Progressing into Roman times around 25BC a man called Apicius created some documents describing recipes prepared by his fellow Romans. In his works, he describes how the meals were separated into starters, main course and afters, something we still use today. This early Roman chef tells us how the ancient chefs used many different herbs and spices, including a few you will know like thyme, fennel and dill. Later on in the 1400s, knights returning from the crusades brought back many foods and herbs from the East, including spices like rosemary and coriander. These new foods and tastes was responsible for an increase in cookery books, most of which are kept safe in private collections. For the centuries that followed, the rich families of the West competed with each other to serve up the most extravagent meals, and as a result the best chefs and their recipe collections were at a premium. However, it was during the nineteenth century the formal cooking and recipe books became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collating, verifying, and publishing recipes to help cooks of their time. By the advent of the twentieth century, cooking publications were in great demand, mostly as a result of increased literacy, people having increased spare time and having more disposable income. The introduction of the TV brings us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting us all to search through thousands of recipes like those on our web site. |
