The History of Recipes
It is quite possible to follow the history of transcribed cooking instructions way back into antiquity, in truth as far as early Egypt, and maybe further still. In practice though, these, early records were just basic pictorial, hieroglyphic or cunieform recipes for preparing food.
In an interesting twist, the oldest recipe in existence, according to experts in ancient history is a collection of clay tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `exhilarated, wonderful and blissful`. Much later, in Roman times a roman called Apicius compiled a collection of scripts describing recipes cooked by wealthy Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into appetizers, main meal and desserts, something we still use today. Additionally, he recounts how the Romans were skilled in the use of a good variety of herbs and spices, including a few that will be familiar to modern chefs for example thyme, mint and parsley. Later on, in the 15th century, knights returning from the crusades brought back many spices and herbs from Arab countries, including spices like coriander, basil and rosemary. The introduction of these new foods and spices created an explosion in recipe books, most of which still exist in private cookery archives. Over the succeeding few hundred years, the rich and powerful families of Europe competed with each other to serve the most exotic banquets, and as a consequence, the best chefs and their recipes increased in prestige. Notwithstanding that, it was during the 19th century that cookery and recipe books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collecting, verifying, and publishing the recipes of their peers. The TV revolution brings us cooking programs and the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, permitting everybody to access massive numbers of recipes such as those found on our site. |
