The History of Recipes
It is quite feasible to prove the history of written cooking instructions back into the distant past, at least as far into history as pharonic Egypt, and quite possibly further than that. Having said that, mostly, these ancient cook books were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
As we move into The time of the romans 25BC a man called Apicius assembled a number of scripts detailing recipes cooked by the Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into appetizers, main course and dessert, something we still use today. He also recounts how the cooks of Roman times used a good variety of aromatic flavours, including a few that will be familiar to modern chefs like thyme, fennel and dill. During the next few hundred years, the powerful families of Wesstern Europe competed to offer the most extravagent meals, and as a result the best cooks and their collection of recipes were highly sought after. Notwithstanding that, it was during the nineteenth century that fine cookery and recipe books really came of age. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted their lives to collecting, trying out, and publishing recipes to help cooks of their time. By the time we get to the twentieth century, recipe publications were in great demand, as a result of increased literacy, more leisure time and disposable income. |
