Directions
Make white sauce out of butter;melt butter in pan, add flour,cheese,
and milk. Add salt and pepper to taste as well as chili sauce. Mix
in with precooked onion and pepper. Precook the cabbage in a steamer
and drain. Pour white sauce over cooked cabbage and put in greased
baking dish in preheated moderate oven for 20 minutes. Source: Mom

The History of Recipes
Written cooking instructions as a concept can be traced back into distant history, in truth as far into history as the Egypt of the Pharoahs, and maybe further still. Interesting though that maybe, sadly, these old recipes were just primitive hieroglyphic or cunieform instructions for meal preparation.
Interestingly, the most ancient recipe found, according to experts in ancient history are some tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. Later on, in Roman times 25BC a man called Apicius created some scripts showing how to cook the recipes prepared by his fellow Romans. In his scrolls, Apicius describes how the roman meals were separated into hors d`oeuvres, main meal and desserts, a style of dining still practiced today. He also informs us how the cooks of Roman times used many different spices, including many that are still in use today for example bay, mint and dill. In the fifteenth century, knights returning from the crusades brought back many new foods and spices from the East, including rosemary and coriander. These new spices and herbs caused an eruption in recipe books, many of which are kept safe in private cookery archives. During the succeeding few hundred years, the upper-class families of Europe strove to serve the most extravagent banquests, and as a result the best cooks and their recipe collections increased in prestige. Even so, it wasn`t until the 19th century that cookery and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to assembling, testing, and recording recipes of the day. By the arrival of the 1900s, cooking books are starting to become popular as a result of increased literacy, people having more leisure time and a general increase in wealth. Like it or not, the introduction of television brings us celebrity TV chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, allowing everybody to search through thousands of recipes like those on this recipe site. |
