The History of Recipes
Transcribed cooking instructions as a concept can be traced far back into ancient history, at least as far into history as ancient Egypt, and possibly even further than that. However, sadly, these old cook books were just primitive hieroglyphic recipes for preparing meals.
In an interesting twist, the oldest recipe in existence, according to experts is a collection of stone tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful and exhilarated. During the time of the Romans a roman called Apicius compiled some scripts detailing recipes cooked by his fellow Romans. In his scrolls, he describes how the meals of wealthy Romans were split into hors d`oeuvres, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the ancient Romans were skilled in the use of a wide range of spices and herbs, including a few that are still present in modern kitchens for example basil, fennel and asafoetida. Later on, in the 15th century, people returning from the crusades brought us many spices and herbs from Arab countries, such as parsley and basil. These new herbs and spices caused an eruption in manuscripts on cookery, the majority of which still exist in private libraries. When we get to the 20th century, cookery books were in great demand, mostly due to more people being able to read, people having more free time and disposable income. The arrival of TV gave us TV cookery programs and the recipe books that accompanied them. Which brings us neatly up to date and the internet revolution, permitting everyone to access massive numbers of recipes just like those on this recipe site. |
