Directions

The History of Recipes
Historians have proved the existence of recipes way back into ancient history, in fact as far back as the early Egyptians, and quite possibly further than that. Interesting though that maybe, sadly, these early cookbooks were just basic hieroglyphic instructions for preparing food.
Fascinatingly, the most ancient recipe found, according to experts are a few tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. During the time of the Roman Empire a roman called Apicius wrote a number of scripts detailing recipes cooked by the Romans. In his publication, he recounts how the meals of wealthy Romans were split into starters, main course and desserts, something we still use today. He also informs us how the ancient chefs were skilled in the use of many different spices and herbs, including a few that will be familiar to modern chefs like thyme, fennel and asafoetida. In the fifteenth century, people returning from the crusades brought back many spices and herbs from Arab cooking, including coriander, parsley, basil and rosemary. These new foods and spices led to a torrent in books on cooking, most of which still exist in private collections. Over the following few hundred years, the powerful and rich houses competed to offer the most exotic banquets, and as a consequence, the best cooks and their collection of recipes became highly prized. Nevertheless, it was during the nineteenth century the formal cooking and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to assembling, testing, and publishing recipes to help cooks of their time. By the arrival of the 20th century, cook books are in great demand, mostly due to more people being able to read, people having more leisure time and disposable income. |
