The History of Recipes
It is quite possible to track the history of recipes way back into the far past, in fact as far back into recorded history as the early Egyptians, and maybe further still. Having said that, in the main part, these ancient records were just very simple hieroglyphic recipes for preparing food.
Fascinatingly, the most ancient recipe discovered so far, according to experts is a collection of tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. Progressing into The time of the romans 25BC a roman called Apicius assembled a number of documents showing how to cook the recipes cooked by wealthy Romans. In his works, Apicius tells us how the meals were divided into hors d`oeuvres, main meal and dessert, something we still use today. Aspicius describes how the Romans used a good variety of spices, including a few that will be familiar to modern cooks such as basil, fennel and asafoetida. Over the next few centuries, the upper-class families of the West strove to serve up the most exotic meals, and because of this the best chefs and their recipe collections became highly prized. Even so, it wasn`t until the 19th century that fine cookery and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collecting, testing, and publishing the recipes that were being prepared for the better households. By the arrival of the twentieth century, cookery publications were greatly in demand mostly due to higher levels of literacy, people having increased spare time and disposable income. |
