The History of Recipes
Historians have proved the existance of recipes way back into the far past, in truth as far into history as the ancient Egyptians, and quite possibly further than that. Having said that, mostly, these old cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.
Interestingly, the most ancient recipe in existence, according to academics is a collection of ancient tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `exhilarated, wonderful and blissful`. During Roman times around 25BC a roman called Apicius assembled a collection of scripts which described recipes enjoyed by his fellow Romans. He tells us how the roman meals were divided into hors d`oeuvre, main meal and afters, a style of dining still practiced today. Additionally, he describes how the Roman chefs made use of a wide range of spices and herbs, including a few that will be familiar to modern cooks such as bay, fennel and asafoetida. In the fifteenth century, knights returning from the crusades brought back many new spices and herbs from Arab cooking, including basil and rosemary. The introduction of these new foods and spices prompted an eruption in manuscripts on cooking, many of which are kept safe in private cookery archives. During the succeeding few hundred years, the upper-class families of Wesstern Europe tried to serve up the most exotic meals, and as a consequence, the best cooks and their collection of recipes were much in demand. Notwithstanding that, it wasn`t until the 19th century that cooking and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, testing, and publishing popular recipes of the day. Like it or not, the introduction of television brings us celebrity chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the internet revolution, allowing us all to search through massive numbers of recipes just like those on this site. |
