3 shallots
1 tbsp minced parsley
2 tbsp wine vinegar
5 tbsp salad oil
2 cup red beans, cooked, cold
1 salt & pepper to taste
Directions
Chop shallots fine, including tops. Add parsley, vinegar, and oil and
season to taste. Pour over beans and pack in jars.

The History of Recipes
It is quite possible to follow the history of transcribed cooking instructions way back into antiquity, in truth as far back into recorded history as the early Egyptians, and possibly even further. In practice though, sadly, these old cook books were just very basic hieroglyphic recipes for meal preparation.
Progressing into Roman times around 25BC a roman called Apicius compiled a number of documents which described recipes prepared by his fellow Romans. In his publication, he tells us how the meals were divided into starters, main meal and dessert, a style of dining still practiced today. Aspicius recounts how the Roman cooks used a good variety of herbs, including a few that will be familiar to modern cooks for example thyme, rue and asafoetida. Later on in the 1400s, people returning from the crusades brought us many new spices and herbs from the holy land, such as basil and rosemary. The introduction of these new tastes was responsible for an eruption in recipe publications, many of which are now in private libraries. By the advent of the twentieth century, cookery books were increasing in popularity mostly due to better eduction, more free time and disposable income. |
