3 shallots
1 tbsp minced parsley
2 tbsp wine vinegar
5 tbsp salad oil
2 cup red beans, cooked, cold
1 salt & pepper to taste
Directions
Chop shallots fine, including tops. Add parsley, vinegar, and oil and
season to taste. Pour over beans and pack in jars.

The History of Recipes
Written recipes as a concept can be observed way back into ancient history, in fact as far back into recorded history as the ancient Egyptians, and potentially, even further back. Interesting though that is, generally, these old records were just simple pictorial, hieroglyphic or cunieform recipes for meal preparation.
In an interesting twist, the most ancient recipe discovered, according to experts is a series of ancient tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. Much later, in Roman times a man called Apicius created a collection of scripts showing how to cook the recipes prepared by his fellow Romans. In his scrolls, he tells us how the meals of wealthy Romans were split into appetizers, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the cooks of Roman times were skilled in the use of many different herbs and spices, including many that are still in use today for example bay, mint and parsley. Over the succeeding few hundred years, the rich families of Europe strove to serve the most exotic banquets, and consequentially the best chefs and their collection of recipes became highly prized. However, it was during the nineteenth century that cookery and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, spent years to collating, verifying, and recording recipes of the day. When we get to the twentieth century, cooking publications are starting to become popular mostly due to better eduction, people having increased leisure time and disposable income. |
