The History of Recipes
We are able to track the history of meal recipes way back into the far past, certainly as far into history as early Egypt, and quite possibly further than that. In practice though, sadly, these ancient cook books were just simple hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the oldest recipe discovered so far, according to academics are some tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `wonderful`. Later on, in The time of the roman empire around 25BC a roman called Apicius assembled a collection of scripts describing recipes cooked by the Romans. In his publication, Apicius describes how the roman meals were separated into hors d`oeuvre, main meal and dessert, a very modern way of dining. Aspicius tells us how the cooks of Roman times used many spices, including a few that will be familiar to modern chefs like basil, mint and asafoetida. During the following few hundred years, the upper-class families of Wesstern Europe competed with each other to lay on the most extravagent meals, and because of this the best cooks and their recipes were at a premium. Notwithstanding that, it wasn`t until the 19th century that formal cookery and cookery books rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to collating, testing, and publishing recipes to help cooks of their time. By the time we get to the 1900s, cooking books are in high demand, mostly as a result of higher levels of literacy, more leisure time and having more disposable income. The arrival of television brings us cooking programs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of computers and the internet, allowing everybody to search through thousands of recipes like the ones you can find on this web site. |
