The History of Recipes
It is possible to follow the history of `recipes` way back into history, in truth as far back into recorded history as the ancient Egyptians, and maybe even further. Interesting though that is, sadly, these early cookbooks were just simple hieroglyphic instructions for food preparation.
In fact, the most ancient recipe discovered so far, according to Professor Solomon Katz, are some tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated. Later on, in The time of the romans around 25BC a roman called Apicius compiled a collection of documents which described recipes prepared by his fellow Romans. In his works, he recounts how the meals were split into hors d`oeuvres, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he recounts how the Roman cooks made use of a good variety of herbs and spices, including a few that will be familiar to modern chefs for example bay, fennel and parsley. Later on in the 1400s, knights returning from the crusades brought back many new spices and herbs from middle-east cuisine, including spices such as rosemary and coriander. The introduction of these new culinary ideas caused an outbreak in publications on food, the majority of which are kept safe in academic collections. For the decades that followed, the upper-class families of the West tried to serve the most exotic banquets, and because of this chefs and their recipe collections were highly sought after. However, it wasn`t until the 1800s that fine cookery and cookery books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collecting, verifying, and publishing recipes common in their social group. By the time we get to the 20th century, cookery publications were increasing in popularity mostly due to higher levels of literacy, leisure time and being a little richer. |
