The History of Recipes
Food historians have traced the existance of recipes way back into history, certainly as far into history as the early Egyptians, and quite possibly further than that. Having said that, these, early recipes were just very basic hieroglyphic instructions for food preparation.
Interestingly, the oldest recipe in existence, according to experts is a collection of clay tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful and exhilarated. During Roman times around 25BC a roman called Apicius compiled a collection of scripts describing recipes cooked by wealthy roman citizens. He tells us how the roman meals were divided into hors d`oeuvre, main course and desserts, a very modern way of dining. He also describes how the cooks of his times used a good variety of herbs and spices, including many that are still in use today such as basil, rue and parsley. In the fifteenth century, knights returning from the crusades brought back many spices and herbs from Arab countries, including basil and coriander. These new culinary innovations prompted a torrent in books on cooking, the majority of which still exist in private collections. During the succeeding few hundred years, the rich and powerful families of Europe competed with each other to lay on the most exotic banquets, and as a consequence, the best cooks and their recipe collections became highly prized. Notwithstanding that, it wasn`t until the nineteenth century that fine cooking and cookery books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collecting, verifying, and recording recipes for their fellow cooks to enjoy. By the arrival of the 1900s, cookery publications are in high demand, mostly due to more people being able to read, more leisure time and disposable income. |
