The History of Recipes
Food historians have traced the existence of recipes way back into antiquity, in truth as far back into history as the Egyptians, and quite possibly further than that. Interesting though that is, generally, these early cookbooks were just primitive pictorial recipes for preparing meals.
Fascinatingly, the most ancient recipe discovered, according to historians is a collection of tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated. As we move into The time of the roman empire 25BC a roman called Apicius compiled a few scripts which described recipes enjoyed by the Romans. In his publication, he tells us how the roman meals were separated into hors d`oeuvre, main meal and desserts, something that is very familiar to us today. He also describes how the chefs of Roman times used a wide range of spices, including a few that will be familiar to modern cooks such as bay, fennel and asafoetida. Over the following few hundred years, the rich and powerful families of Wesstern Europe tried to serve up the best banquets, and consequentially the best chefs and their collection of recipes were much in demand. However, it wasn`t until the 19th century that fine cooking and recipe publications really came of age. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to assembling, testing, and publishing recipes for their fellow cooks to enjoy. By the arrival of the 20th century, cookery publications are increasing in popularity due to better eduction, people having increased free time and having more money. The introduction of television brings us celebrity chefs and the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing everyone to access thousands of recipes just like those on this web site. |
